To celebrate its 40th anniversary, Terrou-Bi paid tribute to what has defined its identity for four decades: vibrant cuisine, expertise passed down through generations, and the pleasure of bringing people together around the same table.
From June 3 to 7, La Terrasse hosted a special edition of the Food Pop-Up featuring Chef Michel Niquet, a long-standing friend of the House. Over five days, lunches, tasting dinners and a closing brunch unfolded in a warm and welcoming atmosphere, offering guests a gourmet experience where memories, influences and culinary craftsmanship came together naturally.
MICHEL NIQUET, A CHEF FRIEND OF THE HOUSE
Long before this anniversary edition, Michel Niquet had already left his mark on the history of Terrou-Bi. His return to the hotel's kitchens, nearly thirty years after his last visit, led to heartfelt reunions with several team members who had shared this journey with him.
Beyond the recipes, the week was filled with conversations, stories and familiar gestures rediscovered. Working alongside the teams, the chef shared his experience, his vision of cuisine and cherished memories, beautifully illustrating one of Terrou-Bi's founding values: the transmission of knowledge




BETWEEN DAKAR AND THE BASQUE COUNTRY
Throughout this special edition, Michel Niquet presented a cuisine that reflects who he is: authentic, generous and deeply rooted in quality ingredients.
Inspired by his native Basque Country and enriched by the flavours of Senegal, the menus created for the Food Pop-Up brought together two regions, two cultures and one shared vision of gastronomy.
From lunch menus and tasting dinners to the closing brunch, each service offered a unique culinary experience, where seasonal ingredients, traditional recipes and contemporary influences blended together naturally.
