To mark its reopening and celebrate 40 years of the House, La Terrasse unveils a signature menu designed as a journey through time. Between memories and present-day inspirations, between what built the House and what continues to shape it. More than a succession of dishes, this menu tells the story of what has defined Terrou-Bi since 1986: a certain vision of gastronomy, of sharing, and of taking time.
A Cuisine Between Heritage and the Present
The Signature Menu 1986–2026 is rooted in continuity. It draws from the history of the gastronomic restaurant that marked the early years of the House, while embracing a more contemporary, refined and expressive approach.
Some will rediscover familiar sensations, subtle references, almost intimate. Others will encounter a precise, modern cuisine, grounded in its time, focused on essentials without compromising on excellence.
It is within this balance that the menu finds its harmony: between memory and movement.




A Sense of Rhythm and Detail
Designed for evening service, the menu unfolds like a true composition. Each moment — from amuse-bouche to dessert — follows a seamless progression, crafted to accompany the rhythm of the meal without ever imposing on it.
The structure is deliberately classic, almost self-evident, allowing space for what truly matters: the quality of ingredients, the precision of cooking, and the balance of flavors.
Here, technique does not seek to impress, but to reveal. A gastronomy expressed with mastery, yet deeply accessible and generous.

A Signature Rooted in Time
Imagined by Kamil & Samir Rahal, this menu is part of a deeply family-rooted story, inseparable from that of Terrou-Bi. Sons of Kalil Rahal, they grew up at the heart of the House, between kitchen and dining room, shaped by the rhythm of service and the passing seasons.
At an early stage, they took over the kitchens of the family restaurant together. Their journeys, influenced by the South-West of France, shaped a complementary vision that left a lasting imprint on the House. One, deeply attached to the fundamentals of traditional cuisine, laid the foundations. The other gradually introduced a freer, more contemporary expression, opening new perspectives without ever breaking continuity.
Today, although they are no longer involved in the day-to-day kitchen operations, their influence remains. It can be felt in a way of cooking, in a level of excellence, in a shared sensibility.
The Signature Menu 1986–2026 is its natural continuation: a cuisine passed on, interpreted by the current brigade, and carried by the same vision of taste and togetherness.
