Conceived as a true living space, La Terrasse evolves without losing sight of what has always defined its identity. Volumes expand, materials interact harmoniously with their surroundings, and the rhythm of the venue follows that of Dakar’s days — peaceful at lunchtime, more vibrant after sunset. A new adjustable roof now allows guests to enjoy the space comfortably throughout the year, creating a subtle balance between indoor and outdoor living.

The historic “canteen” of Terrou-Bi is being reinvented with renewed energy, reflecting the transformation of the Resort itself. The space has become more refined and purposeful while remaining faithful to its warm and welcoming spirit. Deeply rooted in its surroundings yet open to contemporary influences, La Terrasse reinterprets its foundations through a more modern lens, embracing a vision that is distinctly local, yet never predictable.

More than a restaurant, it is a meeting place, a vibrant destination where people, ideas, and experiences come together at the rhythm of Dakar.

THE CUISINE: BETWEEN LAND AND SEA

At La Terrasse, the cuisine follows the same philosophy: evolving while remaining true to its foundations.

The menu has entered a new chapter under the direction of Chef Anthony Jéhanno, whose journey from Brittany to Dakar is itself shaped by a shared connection to the ocean. His cuisine is built on a constant dialogue between land and sea, combining technical precision with deep respect for ingredients.

This approach is reflected in dishes that balance creativity and sensitivity: hummus enriched with butternut squash and peanuts, the spinach and octopus risotto, or fish ceviche elevated with seaweed tartare and a citrus gel, evoking the flavors of the sea.

The menu also features more rooted dishes, such as the Lébou salad, a tribute to local terroir, and generous seafood linguine full of character. Sharing dishes, including the lamb shoulder, extend this philosophy of cuisine designed around togetherness.

Great Senegalese classics naturally retain their place on the menu — thieboudienne, chicken yassa, mafé and dibi — prepared with respect for time-honored recipes, offering the generosity and authenticity found in family kitchens.

And because dessert is an essential part of the experience, La Terrasse embraces an elegant sense of indulgence: from the Terrou-Bi signature doughnut, served with vanilla ice cream and airy chocolate cream, to a lighter, more exotic mango, coconut and tapioca tiramisu.

To mark its reopening, La Terrasse unveils the  Menu Signature 1986–2026.

Conceived as a bridge between the origins of the Maison and the present day, it embodies forty years of cuisine, transmission and evolution. Each dish tells a story — an influence, a memory, a milestone — reinterpreted through a contemporary perspective.

More than a menu, it is a celebration of what has always defined Terrou-Bi:

the taste for things done well, attention to detail, and a commitment to excellence that has endured through the years.
